L'asa fetid, also known asasa-foetida, is a spice and gum resin with unique characteristics:
Origin and extraction
Asafoetida is extracted from the taproot of several plants of the genus Ferula, mainly Ferula assa-foetida, Ferula foetida and Ferula narthex
These plants belong to the Apiaceae (Umbelliferae) family and grow mainly in Iran, Afghanistan, Central Asia and Pakistan.
Physical characteristics
- Appearance: Hard substance, pale pink to dark red-brown in color

- Texture: conchoidal fracture, whitish or milky white, translucent, pearly with a waxy sheen
- Commercial forms: tears (round or flattened grains), mass (clumped tears), or paste
Organoleptic properties
- Odor: strong and pungent, reminiscent of garlic, onion, rotten egg or gas lighting
- Taste: pungent, bitter and spicy
The particularly strong and unpleasant odor of asa fetid has earned it the name "fetid" (stinking, nauseating) and its popular nickname of "devil's shit"
Culinary uses
